Empanadas in the Air Fryer
Traditional meat-filled empanadas can be a double-whammy of fat and calories due to ground beef and a trip to the deep fryer but by using an Air Fryer it will be more healthier and yummier that you can imagine.
- 8 Goya empanada discs, in frozen section, thawed
- 1 cup picadillo
- 1 egg white, whisked
- 1 teaspoon water
- Cooking spray
Preheat the air fryer to 400°F or 204°C for 3 minutes. Spray the basket generously with cooking spray.
Place 2 tbsp of picadillo in the center of each disc. Fold in half and use a fork to seal the edges.
Whisk the egg whites with water, then brush the tops of the empanadas.
Bake 2 or 3 at a time in the air fryer and cook for 8 minutes, or until golden.
Remove from heat and repeat with the remaining empanadas.
- If you can’t find puff pastry dough, then you can use pie crust and cut them into circles using a biscuit/ring butter.
