Veggie Quesadillas in the Air Fryer
This quesadilla recipe is a versatile dish because you can fill the quesadilla with whatever you want or have on hand. This recipe used spinach and shredded chicken, but the options are endless. Using an Air Fryer, it can produce a perfectly crispy quesadilla with melty cheese that everyone would love and enjoy!

Ingredients
- 2 (6 inch) flour or tortillas
- cooking spray
- 1/2 cup shredded Cheddar cheese
- 1/2 cup shredded chicken
- 1/4 cup chopped spinach
Instructions
- Preheat air fryer to 400°F or 204°C for 3 minutes depending on the Air fryer
Spray 1 side of 1 tortilla generously with cooking spray and place flat in air fryer basket.
Spread half the Cheddar cheese over the tortilla. Top the cheese layer with shredded chicken and spinach. Spread remaining cheese over top.
Place second tortilla over the fillings and spray the top with cooking spray.
Air fry for about 10 minutes or until cheese is melted and tortillas are crisp,

Top with sour cream, guacamole, and salsa if desired.
Substitute whole wheat tortillas for the flour tortillas for a heartier flavor. Or use corn tortillas if you are looking for a gluten-free option.
